Well-fed from the Federal Way Farmers Market: Peach hummus

This week’s recipe includes peaches, fresh produce from the Saturday market.

Fruits, vegetables, handmade crafts and more await at the Federal Way Farmers Market every Saturday through October.

Hummus is versatile, easily from scratch and can be made out of almost any fruit or vegetable.

The recipe below includes fresh peaches, strawberries, cucumbers and more from the market.

Federal Way Farmers Market is open from 9 a.m. to 3 p.m. on Saturdays in The Commons mall parking lot along S. 324th Street.

Peach hummus (makes 2 cups)

Ingredients

1 15-ounce canned garbanzo beans, rinsed and drained

3 cups diced peaches, about 3 whole peaches (Amador Farm)

1 cup mango, diced

1 teaspoon grated ginger

1 tablespoon lemon juice

2 tablespoons (Ancient Trees Greek Extra Virgin Olive Oil)

¼ cup tahini

Serving suggestions

1 sliced cucumber (Amador Farm)

Strawberries (Hayton Farms)

Bread sticks (Forest Fairy Bakery)

Apples slices (Amador Farm)

Carrots, peeled and sliced(Amador Farm)

Directions:

This recipe makes a quick and easy snack or appetizer. Did you know that you could also use hummus as a substitute for mayonnaise?

1. In a blender or food processor, combine all ingredients. Blend until smooth.

2. Spoon into a serving bowl and top with chopped peaches.

3. Chill for 2 hours, best served chilled. Serve with your favorite Federal Way Farmers Market produce.
