Well-fed at the Federal Way Farmers Market: Apple cinnamon rolls

Apple cinnamon rolls

Ingredients

Cinnamon rolls:

1 large honey crisp apple (J & E Produce)

2 tbsp lemon juice

2 tbsp Ancient Trees Greek Extra Virgin Olive Oil

3 tbsp butter melted

1/4 cup brown sugar

1 tbsp ground cinnamon

3 tbsp honey (Novo Bees LLC)

1/3 cup raisins

3 cups Bisquick or other baking mix + 3 – 4 tbsp

3/4 + 1/3 cups milk

1/4 cup granulated sugar

Glaze:

1 cup confectioners sugar

1 tbsp butter softened

1/2 tsp vanilla extract

1 tbsp lemon juice

Optional: chopped pecans

Directions

Cinnamon Rolls

1. Preheat oven to 375 degrees. Spray 8 x 8 inch baking dish with cooking spray.

Core and thinly slice apple. I used a mandoline with thin slicer. In a 1-quart microwave save bowl add sliced apples and 2 tbsp lemon juice. Fill with water until apples are covered. Microwave for three minutes. Drain and set aside.

3. In a small bowl combine olive oil, butter, brown sugar and cinnamon. Mix well and set the filling aside.

4. To make the dough mix baking mix, 3/4 cup milk and granulated sugar until dough holds together.

5. On a smooth surface or pastry cloth, sprinkle 3 – 4 tbsp of baking mix. Place the dough on the floured surface. Using a rolling pin, roll out dough to 9 by 18 inches.

6. Using a spoon take the filling and spread on the dough leaving 1/2 inch along edges clean with no filling. Place the apples in a single layer on filling. Sprinkle with raisins.

7. Starting on the long side of the dough, roll tightly. Using a sharp knife, cut into 9 pieces, about 2inches between cuts.

8. Place in prepared pan, cut side down. Pour 1/3 cup milk over rolls. Bake for 30 minutes or until done. While cinnamon rolls are baking prepare glaze.

Glaze

Using a small whisk or fork mix confectioners sugar, butter, vanilla and lemon juice until smooth consistency. Once cinnamon rolls are done, remove from the oven and cool for 5 to 7 minutes and then top each roll with glaze. Optional: sprinkle with chopped nuts. Makes 9 rolls
