Well-Fed from the Federal Way Farmers Market: Peach Tiramisu

Recipe includes fruit from local Saturday market.

The farmers market is located behind The Commons mall along South 324th Street in Federal Way.

Peach Tiramisu (makes 9 servings)

Ingredients

3-4 peaches (Amador Farms)

1 tablespoon lemon white balsamic vinegar (Nature’s Work)

2 Green Mountain tea bags (Ancient Trees)

1/4 cup honey (Novo Bees)

1 teaspoon vanilla extract

1 1/2 cups heavy whipping cream

8 ounces mascarpone cheese, room tempature

1/4 cup granulated sugar

2 packages of Lady Fingers cookie

Directions:

1. Make two cups of hot water and add 2 tea bags. Allow to cool.

2. Use a sharp knife to score the skin of the peaches, by making two or three very shallow cuts in peach. Boil a large pot of water. Turn off burner and lower each peach into the hot water with a slotted spoon. Leave peaches in water for 30 seconds. Using a slotted spoon transfer the peaches to a bowl of iced water to cool.

3. Remove skin and pit of the peaches. Slice each peach into 1/4 inch slices. In a bowl, add peach slices, lemon vinegar and honey. Gently toss until evenly coated.

4. In a mixing bowl add whipping cream. Beat on medium speed with an electric mixer. Gradually add granulated sugar until stiff peaks form. Add mascarpone cheese, mix until combined and lumps are removed.

5. Put a strainer over the tea. Pour peaches into strainer so the juice of peaches and honey drain into the green tea.

6. Dip lady fingers quickly into green tea (do not soak lady fingers or they will fall apart) and lay them in a 8 x 8 inch dish in a single layer. The cookies should be touching each covering as much of the dish as possible.

7. Take half of the mascarpone mixture and spread evenly over lady fingers. Add sliced peaches. Repeat by dipping lady fingers quickly in tea, placing on peaches. Add remaining mascarpone mixture on ladyfingers.

8. Cover with plastic wrap and chill for at least 4 hours or overnight to set. To serve cut 9 pieces and place fresh peaches on the top of each serving.
