Well-fed at the Federal Way Farmers Market: Plum Kuchen

Visit the market from 9 a.m. to 3 p.m. each Saturday through October and pick up the special ingredients needed for the recipe below.

The Federal Way Farmers Market is located in the Commons mall parking lot at 1701 S. 320th St. in Federal Way.

Kuchen is the German word for cake, and this is Vickie Chynoweth’s traditional family recipe of kuchen with streusel topping. Chynoweth’s great-grandparents came from Germany in the late 1800s.

“My great-grandmother lived with my grandparents and taught my grandmother how to cook traditional German foods,” she said.

While Chynoweth never had to opportunity to meet her great-grandmother, there was always a kuchen of some sort at her grandmother’s house. The sweet treat was served with coffee as guests and/or family members sat around the kitchen table discussing the events of the day, she said.

Plum kuchen

Ingredients

15-20 Italian plums (pit removed and sliced)

1/2 cup butter, softened

2 eggs

1 cup all-purpose flour

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1 lemon (zest from 1 medium lemon)

Streusel topping:

1/4 cup of half-and-half (or substitute whole milk)

1 cup all-purpose flour

1/4 cup sugar

1/3 cup cold butter, cut into half-inch pieces

Directions

Preheat oven to 350 degrees. Spray a 9-inch springform pan or 9-inch cake pan with cooking spray and set aside.

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Beat in vanilla.

Combine the flour, baking powder and salt; add to creamed mixture and beat until smooth, about 2 minutes.

Spread the batter evenly into the cake pan. Gently place the plums into the dough, overlapping in a uniform circle until all cake batter is covered.

In a small bowl, combine milk, flour and sugar; cut in butter with a pastry blender or fork, mix until it resembles coarse crumbs. Sprinkle evenly over top of plums.

Bake at 350 degrees for 50-55 minutes or until golden brown. Cool 10 minutes, then run a knife around the edge of the pan and remove the outer ring of springform pan.
