Well-Fed from the Federal Way Farmers Market: Bourbon Peach Cobbler

Bourbon Peach Cobbler

Cobbler:

• 1/4 cup of fresh lemon juice (1 lemon)

• 1/2 tsp. Bourbon (or vanilla extract)

• 4-5 medium sized peaches peeled and sliced Amador Farms

• 3 tbsp. cornstarch

• 1/4 cup brown sugar

Topping:

• 1 cup all-purpose flour

• 1 tsp. Bourbon (or vanilla extract)

• 1/2 cup brown sugar

• 1 tbsp. minced crystallized ginger

• 1/2 cup melted unsalted butter

• 1/2 cup coarsely chopped pecans

• 1 tsp. baking powder

Bourbon Sauce:

• 1/4 cup unsalted butter

• 3 tbsp. heavy cream

• 1/2 cup granulated sugar

• 2 tbsp. Bourbon

Directions:

1. Preheat oven to 350 degrees. Butter a 13” X 9” baking dish.

2. Make the cobbler: Combine all cobbler ingredients in a mixing bowl, stirring until peaches are coated. Pour into prepared baking dish.

3. Make the topping: Combine flour, sugar, butter, Bourbon, and baking powder. Mix until crumbly, and the dough holds together when pinched with two fingers. Mix in crystallized ginger and pecans. Crumble topping dough over the top of the peaches. Bake for 25-30 minutes until golden brown and bubbled around the edges. Let cool for 15 minutes before serving.

4. Make the bourbon sauce: Melt butter in a saucepan over medium heat. Whisk in remaining ingredients. Simmer, stirring frequently until thickened and sugar has melted, about 5 minutes. Cool slightly and pour over each serving.

5. Top the cobbler with whipped cream or ice cream. Best if served warm.
