Asparagus pizza | Recipe of the Week

Visit the Federal Way Farmers Market from 9 a.m. to 3 p.m. every Saturday through October to pick up the local ingredients needed for this week’s recipe. The farmers market is located behind The Commons mall along South 324th Street in Federal Way.

As spring blooms and warmer days fill our busy schedules with sunshine, this quick and healthy asparagus pizza is the perfect meal to keep up with the season’s pace. With tender, raw asparagus at its peak, this vibrant ingredient shines on a crispy crust, requiring minimal cooking time. Ideal for a fast weeknight dinner or a relaxed gathering, this pizza brings fresh, seasonal flavors to your table with ease.

Ingredients

1 lb premade pizza dough

1 tbls Ancient Trees Olive Oil

1 tbls pesto sauce

3/4 cup shredded pizza blend cheese

1 cup sliced mushrooms

1 cup purple asparagus cut in 1-inch pieces (Aguilar Farms)

1 tbls balsamic vinegar

Serves 6 – 8

Directions

1. Follow package directions for pizza dough. Preheat oven according to package directions. Also use cook time from package directions. Or make your own pizza dough.

2. Brush 1 tbls of olive oil over the entire top of pizza dough. Brush pesto sauce evenly over pizza dough. Leave up to a half-inch from the edge clean of pesto sauce.

3. Evenly spread cheese over pesto sauce. Arrange mushrooms and asparagus evenly over pizza dough.

4. Place pizza in the oven and cook according to package directions or 10-15 minutes depending on the thickness of the crust. If making a thicker crust pizza, cook until the dough in the center of pizza is cooked through.

5. Remove from the oven. Drizzle with balsamic vinegar. Cut into individual serving pieces.
