Well-fed from the Federal Way Farmers Market: Roasted Pattypan Squash

Visit the market from 9 a.m. to 3 p.m. each Saturday through October and pick up the special ingredients needed for the recipe below.

The Federal Way Farmers Market is located in the Commons Mall parking lot at 1701 S. 320th in Federal Way.

Roasted Pattypan Squash

Ingredients:

20 fresh green beans cleaned and snipped

2 medium pattypan squash thinly sliced

Half of a medium sweet onion sliced

1 large clove of garlic sliced

2 tablespoons olive oil

½ teaspoon lemon pepper

Salt and pepper to taste

Optional:

1-2 sprigs of fresh basil torn in small pieces

1 tablespoon fresh goat cheese, crumbled

Directions:

Heat oven to 450 degrees.

Use a large baking sheet sprayed with cooking spray for easy clean up.

Toss all ingredients (except for basil and goat cheese) in a 1-gallon plastic bag or place directly on the baking sheet to mix and coat.

Roast for 15-20 minutes, turning vegetables once, until tender and lightly charred.

Put in bowl and mix with torn basil and fresh crumbled goat cheese on top. All vegetables in this recipe can be found at the Federal Way Farmers Market.
