Well-fed from the Federal Way Farmers Market: Maple apple cheesecake bars

Maple apple cheesecake bars

Ingredients:

Pecan crust:

1/4 cup Ancient Trees Greek Extra Virgin Olive Oil

3 cups finely chopped pecans

1/4 cup local raw honey (Novo Bees)

1 large egg white

Maple cheesecake:

8 ounces of 1/3 less fat cream cheese

1 large egg

1/4 cup 100% pure maple syrup

Apple filling:

2 apples, = 3 1/2 to 4 cups peeled, cored & diced (Armando Farms)

1/4 cup 100% pure maple syrup

1 tablespoon ground cinnamon

Crumble topping

1 1/2 cups Fairy Munch Granola (Forest Fairy Bakery)

5 tablespoons unsalted butter

1/2 cup all-purpose flour

Directions:

Pecan crust

1. Line a 8×8 inch square baking dish with parchment paper.

2. In a medium bowl, mix egg white and olive oil with a fork or whip until thoroughly blended and frothy. Add finely chopped pecans and honey. Blend until combined.

3. Press pecan mixture evenly into parchment lined baking dish.

5. Preheat to 350 degrees. Place pecan crust in oven for 10 minutes. While crust is baking prepare remaining layers to maple apple cheesecake bars.

Maple Cheesecake

1. In a large mixing bowl add cream cheese, large egg, and maple syrup. With an electric mixer, mix on high for 2 minutes. Set aside.

Apple Filling

1. In a large mixing bowl mix chopped apples and cinnamon until evenly coated. Add maple syrup, gently mixing until evenly coated. Set aside.

Crumble Topping

1. In a mixing bowl using a pasty blender or 2 table knives cut in butter, flour and Fairy Munch Crunch until evenly blended. Set aside.

2. To assemble, pour maple cheesecake mixture over pecan crust. Evenly sprinkle apple mixture over cheesecake. Evenly sprinkle crumble topping over apple filling.

3. Bake for 45 minutes. Cool on wire rake. Lift out of baking dish using ends of parchment paper.

4. When cool cut into serving size pieces add whipped cream and drizzle with additional maple syrup. Also good served with ice cream and caramel sauce.
