Well-fed from the Federal Way Farmers Market: Berry Delicious French Toast

Visit the market from 9 a.m. to 3 p.m. each Saturday through October and pick up the special ingredients needed for the recipe below.

The Federal Way Farmers Market is located in the Commons Mall parking lot at 1701 S. 320th in Federal Way.

Berry Delicious French Toast

Ingredients

2 cups fresh raspberries, divided

1 package 8 oz. Neufchatel cheese

2 tablespoons sugar (divided)

3 eggs

1 tsp. vanilla

1 tablespoon cinnamon

1 cup milk

1 loaf challah bread, sliced in 12 slices (Forest Fairy Bakery)

Maple syrup

Cooking oil (your preference)

Directions

In a medium bowl, combine 1 cup raspberries, Neufchatel cheese and one tablespoon of sugar.

Mash with a fork, combining ingredients. Set aside.

In a separate shallow bowl, combine eggs, cinnamon, vanilla, one tablespoon sugar and milk. Whisk to combine ingredients.

Heat griddle or skillet over medium high heat. Add oil to coat griddle. Soak each slice of bread in egg mixture approximately 15-20 seconds and place on heated griddle.

Cook for two minutes or until golden brown, then flip over to cook other side until golden brown.

To serve, place three slices of French toast on a serving plate. Spoon one tablespoon raspberry cream cheese spread in between slices. Top with maple syrup and fresh raspberries from the Federal Way Farmers Market. Makes four servings.
