Meatloaf, with its hearty blend of ground meat, bread crumbs, eggs and savory seasonings, holds a special place as a quintessential comfort food. This recipe is gluten free for those that long for meatloaf and are on gluten free diets. The warm, tender slices, often smothered in a tangy ketchup glaze, evoke memories of home-cooked meals and family gatherings. The dish’s simplicity and versatility, whether paired with creamy mashed potatoes or tucked into a sandwich, offer a sense of nostalgia and satisfaction.

Ingredients

2 lbs ground beef 80/20

1 cup chopped onion (Amador Farms)

2 large eggs

1 tbsp minced green garlic (Aguilar Farms)

1/4 cup Bret’s Texas Style BBQ Sauce

1 cup shredded purple potato (Amador Farms)

Meatloaf sauce:

2 tbsp Bret’s Texas Style BBQ Sauce

3/4 cup ketchup

2 tbsp honey from Novo Bees

Directions:

1. Preheat oven to 350 degrees. Have a loaf pan ready, 8” x 4”.

2. In a large bowl, mix all ingredients except for the ground beef. Mix well with a fork. Add ground beef and mix until well combined. I wear plastic food gloves and use my hands — I find it to be easier.

3. Once meat mixture is combined, place in loaf pan shaping meat to form to pan. Bake for 40 minutes.

4. While meatloaf is baking, make sauce by mixing all meatloaf sauce ingredients until well combined.

5. After 40 minutes, remove meatloaf from the oven. Spoon sauce evenly on the top of the meatloaf. Place back in the oven for 20 minutes or until meat thermometer reads 160 degrees.

6. Remove from the oven. Let the meatloaf rest for 5-10 minutes. Slice and enjoy. Serves 6 to 8.
